Quick & Easy Salad Ideas!

Strawberry Summer Salad

INGREDIENTS:

  • Lemon Pepper Chicken - see recipe below.

  • Sweet potatoes

  • Mixed Greens

  • Organic Strawberries

  • Walnuts or nut of choice

  • Balsamic Reduction or Balsamic Vinegar

  • Extra Virgin Olive Oil

DIRECTIONS:

  • Grilled Chicken with lemon pepper marinade, see recipe below.  Option to use pre-made Rotisserie Chicken for a quick & easy substitute! 

  • Sweet potatoes - toss in EVOO & salt, then air fry for 14 min at 400 flipping halfway through (option to Bake in oven for 40 min @425 flipping halfway through) 

  • Add mixed greens to a large dinner plate or salad bowl.  Top with chicken, sweet potatoes, strawberries and walnuts.  Top with EVOO & Balsamic & enjoy!

Lemon Pepper Chicken

INGREDIENTS:

  • 2 lbs. chicken tenders

  • 3/4 tsp. black pepper fresh ground, more or less

  • 1/4 cup lemon juice

  • 1 tsp. paprika

  • 2 tbsps. olive oil

  • 3/4 tsp. oregano dry

  • 3/4 tsp. salt more if need

  • 4 cloves garlic minced or 3/4 tsp garlic powder

DIRECTIONS:

  • Preheat the air fryer to 390 F.

  • Clean and trim the chicken tenders. Place in a bowl and marinate with the remainder of the ingredients.

  • Line the tenders in the preheated air fryer without overlapping them. You will need to do them in 2-3 batches, depending on the size of your air fryer.

  • Cook the tenders in the air fryer for 6-8 minutes. (cooking time depends on their size).

Sweet Kale Salad

INGREDIENTS:

  • Kale - Pre-washed & Shredded

  • Shredded Brussel Sprouts 

  • Shredded Cabbage Mix

  • Organic Chicken - option to use pre-made Rotisserie Chicken or prep your own!

  • Pumpkin Seeds 

  • Craisins 

  • Primal Kitchen Poppy Seed Dressing

DIRECTIONS:

  • Grill, Bake or Air Fry Organic Chicken marinated in All Purpose Seasoning. 

  • Add kale, shredded brussels sprouts to a large dinner plate or salad bowl. 

  • Top with chicken, pumpkin seeds & craisins.  Top with poppy seed dressing & enjoy!

BBQ Chicken Salad

INGREDIENTS:

Salad:

Grill, Bake or Air Fry Organic Chicken marinated in BBQ Sauce. 

  • Add romaine & Shredded Cabbage to a large dinner plate or salad bowl. 

  • Top with chicken, quinoa, onions, tomatoes, apples & walnuts.  Top with green goddess dressing & enjoy!

Quinoa:

  • 1 Cup Quinoa rinsed.  1¾ cups water.  Combine the quinoa and water in a pot & bring to a boil.  Cover, reduce the heat, and simmer for 15 minutes.  Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork. 

Guacamole Greens Salad

INGREDIENTS:

  • Grill, Bake or Air Fry Organic Chicken marinated in BBQ Sauce.  Add romaine & Shredded Cabbage to a large dinner plate or salad bowl.  Top with chicken, quinoa, onions, tomatoes, apples & walnuts.  Top with green goddess dressing & enjoy!

  • Quinoa - 1 Cup Quinoa rinsed.  1¾ cups water.  Combine the quinoa and water in a pot & bring to a boil.  Cover, reduce the heat, and simmer for 15 minutes.  Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork. 

Black Bean Salad

INGREDIENTS:

  • 2 cans of black beans - drained & rinsed

  • 1 can of corn - drained & rinsed

  • 2 avocados cubed

  • 2 jalapeños or bell peppers if you don’t like it spicy!

  • 1/2 cup cilantro

  • 1/2  medium red onion

  • 1 cup tomatoes, diced

  • 2-3 limes

  • Salt and pepper to taste

DIRECTIONS:

  • Dice the onion, tomatoes and chop the cilantro. Open cans of beans and corn, drain and rinse.

  • Cut the avocados last so they don’t brown.

  • Add everything to a large mixing bowl along with the lime juice, salt, and pepper.

  • Taste and add salt / pepper / lime juice as needed.

Cucumber, Tomato & Mozzarella

INGREDIENTS:

  • 2 heads Romaine Lettuce 

  • 2 Persian cucumbers sliced

  • 3 cups cherry tomatoes halved

  • 8 oz Mozzarella Balls- Here is a great plant based option!  Miyoko’s Mozzarella

  • Fresh basil

  • 1 tablespoon extra-virgin olive oil

  • Sea salt & ground black pepper to taste

DIRECTIONS:

  • Wash & chop romaine, slice cucumbers & tomatoes.  Add all ingredients into a large bowl and toss with EVOO, S&P.  Serve & top with fresh basil & protein of your choice!

Watermelon & Feta Salad

INGREDIENTS:

  • Dressing:

    • 2 Tbsp extra virgin olive oil

    • 3 Tbsp fresh lime juice

    • ½ clove garlic 

    • ¼ tsp sea salt 

    Salad:

    • 5 cups cubed watermelon 

    • 1 cup diced persian cucumber 

    • ¼ cup thinly sliced red onion 

    • ⅓ cup crumbled feta cheese

    • 1 avocado cubed 

    • ⅓ cup torn mint or basil leaves 

    • ½ jalapeño, thinly sliced

    • Sea salt

DIRECTIONS:

  • Mix the dressing in a small bowl: whisk together the olive oil, lime juice & garlic salt

  • Arrange the watermelon, cucumbers & onions on a large plate. Drizzle with half the dressing. Top with feta, avocado, mint & pepper & drizzle with remaining dressing.  Season to taste & serve!
